I am back.
Yesterday, I randomly googled “best tacos in Fort Collins” and Yelp came up first. Gross. The second article mentions nearly every restaurant that serves tacos in the city. However, the author, who claimed to have been to all of them, also loved every single one, and often repeated the words that were on the taco shop’s website.
This annoyed me. When I google “best tacos” in any random town, I do not want Fuzzy’s Taco Shop to come up. No offense to Fuzzy’s, we occasionally end up at their bar in Windsor, but these are far from the “best tacos” anywhere.
So, then I considered this platform, TacosandPho.com. I still pay yearly for hosting and the domain name. This isn’t exactly cheap. And it’s not that I haven’t been eating tacos since my last post in 2023. I’ve eaten a lot of tacos since 2023. You only have to consult with my jeans.
And I have stayed active on the Tacos & Pho Facebook page. Kinda.

I had planned to go to visit the CSU Trial Gardens in Fort Collins today, and then eat tacos. The second part got done, although I will go the gardens. It’s a summer tradition.
Right now, I am sitting a Zwei Brewing, a hell of a brewery in southern Fort Collins.

First, I went to Costco where I had to pick up some prescriptions because I am falling apart. And I bought their Kirkland beer. In my defense, it’s made by Deschute’s (one of my gateway breweries to craft beer), and we need something inexpensive in our beer fridge.
Believe me, we do our part to support the little guys. Case in point, I am at Zwei on a Tuesday, which is surprisingly busy around noon. But this is not a blog about beer.
This is, in fact, a blog about tacos and pho, and other things that will make you and me fat. So, of course beer will be mentioned.
The fact that the above-mentioned article about the “best tacos in Fort Collins” failed to mention any taco trucks made me angsty. Food trucks are where I have gotten my best tacos.

I will admit, a $3 taco warms my heart and that’s the price at many taco trucks. I will also admit that there is one taco truck where I got the saddest $6 tacos ever, and unfortunately it shows up at many breweries. If you are going to charge me $6 for just a taco, it better be delicious. For instance, the Taco Man Food Truck! I loved those $6 tacos. They now have a restaurant in Berthoud that I still haven’t been to (my bad).

The point to this rambling is that taco trucks rule, and you should hunt them down. Like I did today.
Today, I needed tacos, and I wanted them quick and cheap. Ta’ Cabrón Food Truck is fairly close to Zwei, so I decided to go there. Google Maps was confused once I entered the Sam’s Club parking lot. It kept telling me I was going the wrong way, but I circled that lot until I found it.

And those tacos were pretty legit. I’d ask for a red sauce next time, because they came only with green sauce, and no roasted jalapeno. But for $3 a taco, they were solid, and I’d go back again.
You should also know that this summer, during Loveland Loves BBQ & Brew, I didn’t have barbecue. Instead, I went to the one taco truck sandwiched between barbeque food trucks that was there—Taquero Muxo. Those were excellent tacos.

Taqueria Muxo is a taco truck worth stalking, for sure. Also, it’s $3 per taco, and they added a roasted jalapeno to the plate. Happiness.
I encourage you to visit a taco truck and take that tortilla wrapped meaty goodness to the nearest brewery. Salud! I’m back.
